Chicken, Sweet Potato, and Goat Cheese Wraps
- 1 whole Boneless Skinless Chicken Breast, Split (Or 2 Chicken Breast Halves)
- Grill Seasoning, To Taste, For The Chicken
- Olive Oil, For Coating The Chicken And The Veggies
- 1 whole Sweet Potato, Sliced Into 1/8" Disks
- 2 whole Red Onions, Peeled And Quartered
- 2 Tablespoons Brown Sugar (up To 4 Tablespoons To Taste)
- 1 Tablespoon Kosher Salt
- Black Pepper To Taste
- 1/2 teaspoons Cinnamon (optional)
- 4 ounces, weight Goat Cheese
- 1 package 8 Tortillas Or Wraps
- 1 bunch Scallions, Sliced Thinly
- Bottled Jerk Sauce, For Drizzling, To Taste
- Preheat oven to 450F.
- Heat your grill to medium high heat.
- Coat 2 chicken breasts with olive oil, then liberally sprinkle with grill seasoning.
- Grill 3-5 minutes per side, depending on thickness.
- Cover with foil and set aside.
- Meanwhile, toss sweet potato and onion with enough olive oil to coat.
- Sprinkle on brown sugar, kosher salt, several cranks black pepper, and cinnamon if using; toss to coat evenly.
- Roast veggies in preheated oven for 15-20 minutes or until onions are soft and the sweet potato just begins to brown at the edges.
- Dice chicken into bite sized pieces and toss with sweet potato mixture.
- To assemble wraps: Evenly spread goat cheese on tortillas.
- Spoon warm chicken and sweet potato mixture on top of the goat cheese.
- Drizzle with Jerk Sauce and sprinkle with scallions.
- Roll tortilla like you would a burrito or sandwich wrap and enjoy!
