Can't get enough of this chicken
- 10 each chicken thighs
- 1 tbsp lawrys garlic salt with parsley
- 1 tbsp crushed basil
- 1 tbsp crushed oregano
- 1 cup white cooking wine
- 1 tbsp lawrys all season salt
- 3 tsp paprika
- 1 cup grape tomatoes
- 1 cup sliced red onions
- 1 tbsp shallots
- 1 tbsp minced garlic
- Preheat oven to 375
- Remove some fat off chicken
- Soak chicken with vinegar and lemon juice for 5 min then wash off with water, pat dry, and set aside
- Add all ingredients except minced garlic, wine, shallots, and tomatoes
- Add chicken to mixed ingredients and marinate overnight
- Spray big pan with cooking spray, add 2 tablespoons of oil under medium heat
- When oil is hot, add minced garlic and shallots
- Add chicken thighs and sear on both sides.
- 5-8 minutes total
- Once both sides are brown and seared, add 4 tablespoons of butter then the cooking wine.
- About 1/3 to 1/2 cup VERY SLOWLY.
- Let cook about 3 minutes.
- Cook the marinade in a pan/pot while taking care of the chicken
- Add chicken in a roasting pan with the sauce and marinade and cover with foil tightly.
- Poke holes in the foil and place in oven for 30 minutes
- Remove foil and let it cook until nice, succulent, and gold.
- Afterwards, turn each chicken thigh and add the grape/cherry tomatoes.
- Let cook for maybe 25 minutes or until it's so juicy and look so good, you say ooooooooooo
