Sweet Potato Cake
- 1 c. reduced-calorie margarine, softened
- 2 c. sugar
- 2 1/2 c. mashed, cooked sweet potatoes
- 4 eggs or 8 egg whites
- 3 c. sifted all-purpose flour
- 1/4 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 tsp. vanilla extract
- 1 tsp. orange extract
- Thoroughly cream the margarine and sugar.
- Add sweet potatoes and beat until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift together the flour, salt, baking powder, baking soda, cinnamon and nutmeg; gradually add to creamed mixture, beating well.
- Blend in vanilla and orange extracts. Pour into a greased and floured 10-inch tube pan.
- Bake in 350u0b0 oven for 1 hour and 15 minutes or until done.
- Cool about 5 minutes and remove from pan.
- While still hot, drizzle with glaze.
