Green Chile Enchiladas(Stacked)
- 12 corn tortillas
- 1 medium yellow onion, diced
- 2 (10 oz.) cans green enchilada sauce
- 1 can Ortega chiles, diced
- 1/4 lb. grated Longhorn cheese
- 1/4 lb. Jack cheese
- 2 tsp. garlic powder
- 2 tsp. black pepper
- Coat skillet with nonstick cooking spray. Cook onion and green chilies.
- Heat enchilada sauce.
- Add onion, green chilies, garlic powder and black pepper to sauce.
- Heat tortillas.
- Preheat oven to 350u0b0.
- Cover bottom of shallow baking dish with some of the sauce.
- Dip tortillas, one at a time, in sauce.
- Place 4 on bottom of dish.
- Top each with cheese.
- Continue to make 4 stacks. Top all stacks with rest of sauce and cheese.
- Place in oven and bake until cheese is melted.
- After removing from oven, may be topped with chopped lettuce and tomatoes for extra flavor.
