Mom Austin's Blueberry Pie Filling Coffee Cake Recipe
- 1 c. sugar
- 4 Large eggs
- 1 c. oil
- 1 teaspoon baking pwdr
- 2 c. flour
- 1/2 teaspoon salt
- 1 can blueberry pie filling
- 1 teaspoon cinnamon
- 2 tbsp. brown sugar
- Beat sugar and Large eggs; add in oil and beat.
- Sift together flour, baking pwdr, and salt.
- Fold in dry ingredients; beat well.
- Grease and flour a 9 x 13 inch pan.
- Pour half of batter in pan.
- Spread with pie filling.
- Add in rest of batter.
- Mix brown sugar and cinnamon together.
- Sprinkle over batter.
- Bake 40 to 45 min in 350 degree oven.
- Cold and serve with whipped cream or possibly ice cream.
