Incredible Noodle Pudding
- 1 lb. noodles
- 4 oz. butter
- 1 c. sugar
- 4 eggs
- 1/2 c. cottage cheese (pot style)
- 1 pt. sour cream
- 2 apples, peeled, cored and cut up
- 1 small can peaches, drained
- 1 tsp. vanilla
- 1/2 jar orange marmalade
- 1/2 c. raisins
- 1 pt. milk
- 1/2 c. cornflakes
- cinnamon and sugar, mixed to taste
- Preheat oven to 350u0b0.
- Parboil noodles for 5 minutes.
- Drain. Melt butter over noodles and cover well.
- Mix sugar and eggs with electric mixer.
- Add cheese, sour cream and milk.
- Fold in apples, peaches, vanilla, marmalade and raisins.
- Add to the noodles.
- Mix well.
- Pour into a large glass baking dish.
- Fill dish 3/4 full, allowing space for pudding to rise.
- Lightly sprinkle crushed cornflakes on top.
- Dot with butter and cinnamon sugar.
- Bake at 350u0b0 for 1 hour.
- Can be frozen and reheated for later.
