Coconut Cream Pie

  1. Mix flour, 1/2 cup sugar and salt in double boiler.
  2. Add scalded milk.
  3. Stir well.
  4. Cook over direct heat until smooth and thick.
  5. Beat egg yolks.
  6. Add a little of the hot mixture into them, then add to hot mixture.
  7. Cook over boiling water about 2 minutes, stirring constantly.
  8. Remove from heat and add butter and vanilla. Beat egg whites.
  9. Add the 6 tablespoons sugar and 1/4 teaspoon cream of tartar.
  10. Add 1/3 to cooled filling and 1/2 cup coconut. Top with remaining meringue.
  11. Sprinkle with coconut.
  12. Bake in a 350u0b0 oven for about 12 minutes.
