Zucchini-Corn Bake(This Is An Original Recipe, Developed July 1988)
- 2 lb. small zucchini, washed and sliced medium
- 1 large onion, chopped
- 1 Tbsp. margarine
- 4 ears sweet corn, cut from cob
- 1 Tbsp. margarine and water
- salt and pepper to taste
- 3 oz. Durkee real French fried onions
- grated Parmesan cheese
- Cook zucchini and onion in margarine in large skillet with lid, slowly.
- Cook corn in margarine with just enough water to obtain doneness, until water evaporates.
- Combine in shallow baking dish; sprinkle with French fried onions and Parmesan cheese.
- Preheat oven to 400u0b0 and bake quickly, about 5 minutes, watch to see that onion topping is not too done (burned!).
- Serve as a main dish or side dish with chicken, etc.
- Makes 4 to 6 servings.
