Zucchini-Corn Bake(This Is An Original Recipe, Developed July 1988)

  1. Cook zucchini and onion in margarine in large skillet with lid, slowly.
  2. Cook corn in margarine with just enough water to obtain doneness, until water evaporates.
  3. Combine in shallow baking dish; sprinkle with French fried onions and Parmesan cheese.
  4. Preheat oven to 400u0b0 and bake quickly, about 5 minutes, watch to see that onion topping is not too done (burned!).
  5. Serve as a main dish or side dish with chicken, etc.
  6. Makes 4 to 6 servings.
