Three Pepper Quesadillas

  1. Cook and stir peppers, onions and cumin in butter in large skillet until tender-crisp, about 4 minutes.
  2. Drain; reserve butter.
  3. Mix cream cheese and Cheddar cheese until well blended. Spoon 2 tablespoons cheese mixture unto each tortilla; top with scant 1/3 cup pepper mixture.
  4. Fold tortilla in half; place on cookie sheet.
  5. Brush with reserved butter. Bake at 425u0b0 for 10 minutes.
  6. Cut each tortilla into thirds.
  7. Serve warm with salsa.
