Macaroni Cheese Deluxe Recipe
- 1 (7 ounce.) pkg. elbow macaroni (cook till tender)
- 2 c. sm. curd cottage cheese
- 1 c. lowfat sour cream
- 1 egg (slightly beaten)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounce. American sharp cheese (shredded) (I use Kraft Old English sharp slices)
- Cook macaroni according to directions.
- Drain well, combine cottage cheese, lowfat sour cream, egg, salt, pepper.
- Add in 1 c. of the shredded cheese (save rest for topping).
- Mix these ingredients all well.
- Add in cooked macaroni, turn into a well greased casserole dish, sprinkle with remaining cheese and sprinkle with paprika.
- Bake in a moderate oven (360 degrees) for 45 min.
- Serves 6-8.
