Basundi (Creamy Milk Pudding) Recipe
- 12 c. Lowfat milk
- 1/2 c. Sugar
- 6 whl cardamoms (to 8), crushed
- 1 tsp Saffron
- 1/4 c. Warm lowfat milk, (extra)
- 2 Tbsp. Minced pistachios, to garnish
- Place the lowfat milk in a heavy sausepan and bring to the boil, stirring constantly.
- Keep stirring and simmer till the lowfat milk reduces to one-third its original quantity.
- Add in the sugar and simmer for 5 more min.
- Now add in the crushed cardamoms.
- Dissolve the saffron in 1/4 c. warm lowfat milk and add in to the lowfat milk pudding.
- Stir thoroughly.
- Garnish with the minced pistachios.
- Serve chilled.
