Basundi (Creamy Milk Pudding) Recipe

  1. Place the lowfat milk in a heavy sausepan and bring to the boil, stirring constantly.
  2. Keep stirring and simmer till the lowfat milk reduces to one-third its original quantity.
  3. Add in the sugar and simmer for 5 more min.
  4. Now add in the crushed cardamoms.
  5. Dissolve the saffron in 1/4 c. warm lowfat milk and add in to the lowfat milk pudding.
  6. Stir thoroughly.
  7. Garnish with the minced pistachios.
  8. Serve chilled.
