Cajun White Beans And Shrimp

  1. Rinse, peel, devein and butterfly the shrimp and set them aside.
  2. Place shrimp heads and shells on a pizza pan, drizzle on about 4 tablespoons of margarine and bake in a preheated 450u0b0 oven until toasty (about 15 minutes).
  3. Add the heads, shells and accumulated juices to a stock-pot containing about 10 cups of water.
  4. Bring to a rapid boil then reduce heat to simmer and cook for about an hour until about 8 cups of stock remain.
  5. Discard the shells and heads.
