Cajun White Beans And Shrimp
- 2 lb. fresh shrimp
- 4 Tbsp. margarine
- 8 strips lean bacon
- 2 c. diced onions
- 1 c. diced celery
- 1 lb. white beans (navy or Great Northern)
- 1 tsp. garlic powder
- 1 tsp. thyme
- 1 Tbsp. sweet basil
- 4 bay leaves
- 8 c. shrimp stock (from heads/shells)
- 1 Tbsp. crab boil
- salt and black pepper to taste
- Rinse, peel, devein and butterfly the shrimp and set them aside.
- Place shrimp heads and shells on a pizza pan, drizzle on about 4 tablespoons of margarine and bake in a preheated 450u0b0 oven until toasty (about 15 minutes).
- Add the heads, shells and accumulated juices to a stock-pot containing about 10 cups of water.
- Bring to a rapid boil then reduce heat to simmer and cook for about an hour until about 8 cups of stock remain.
- Discard the shells and heads.
