Double Red Pepper Hummus
- 1 can (15 Oz. Size) Chickpeas, Juice Drained Into A Bowl
- 1/2 cups Roasted Red Peppers
- 1 Chipotle Pepper In Adobo Sauce
- 1 whole Lemon, Juiced
- 1/4 teaspoons Salt
- 2 cloves Garlic, Smashed
- 2 Tablespoons Tahini Paste
- 1 Tablespoon Olive Oil
- 13 cups Juice From Chickpea Can, Or As Needed
- In the food processor, add chickpeas, roasted red peppers, chipotle pepper, lemon juice, salt, garlic, and tahini.
- Give it a few pulses, then give it a whirl while streaming in the olive oil.
- Add as much chickpea juice back in as needed to reach desired consistency.
- Use a spatula to scrape down the sides and buzz until desired texture.
- Keep chilled and serve with veggies or pita chips.
