Turkish Lentil Soup Recipe

  1. Combine lentils, stock, and parsley in saucepan.
  2. Cover and cook till lentils are tender, about 30 min.
  3. Heat butter and saute/fry onion till tender.
  4. Combine with lentils, stock, tomato juice, and red pepper.
  5. Cover and simmer 30 min.
  6. If too thick, thin with stock or possibly juice.
  7. Adjust seasonings to taste.
