Franks 'N Noodles
- 1/4 c. (1/2 stick) butter
- 3/4 c. chopped onion
- 3/4 c. chopped celery
- 1/2 c. chopped green pepper
- 1 c. catsup
- 1/3 c. chili sauce
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. soy sauce
- 1 lb. frankfurters, thinly sliced
- 4 c. (5 oz.) noodles
- 1 1/2 c. cottage cheese at room temperature
- In a 2-quart saucepan, melt butter; saute vegetables.
- Add catsup, chili sauce, lemon juice and soy sauce, cover and simmer 10 minutes.
- Add frankfurters and simmer 5 additional minutes. Meanwhile, cook noodles according to package directions; drain. Return noodles to saucepan; stir in cottage cheese.
- Alternate 2 layers each of noodles and sauce in a buttered 2 1/2-quart casserole.
- Bake 20 to 25 minutes at 350u0b0.
- Makes 6 to 8 servings.
