Mushroom Brown Rice Stuffing
- 6 c. water
- 1 tsp. salt
- 1 box brown rice (about 2 c.)
- 2/3 c. butter
- 1 1/3 c. onion, chopped
- 1 1/3 c. celery, sliced
- 1 lb. mushrooms, sliced
- 2 tsp. salt
- 1 tsp. pepper
- 1 1/2 Tbsp. poultry seasoning
- 5 c. whole bran cereal
- 1/4 c. milk
- In large saucepot, bring water and 1 teaspoon salt to boiling. Gradually stir in rice.
- Cover; cook on low heat for 45 minutes, or until liquid is absorbed.
- In large skillet, melt butter.
- Add onion, celery and mushrooms; saute until soft.
- Stir in 2 teaspoons salt, pepper and poultry seasoning.
- Add to cooked brown rice.
- Add whole bran cereal.
- Sprinkle with milk; toss until moistened.
- Stuff lightly into turkey.
- Makes enough for 10 to 12-pound turkey.
