Healthy Oat Bran Muffins with Banana, Blueberry, Carrots and Walnuts
- 3/4 cups Whole Wheat Pastry Flour
- 3/4 cups Oat Bran Cereal (Bob's Red Mill Recommended)
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1 teaspoon Cinnamon
- 1 whole Medium Riped Banana Mashed
- 1/2 cups Sour Cream
- 1 whole Large Egg, Lightly Beaten
- 2 Tablespoons Cooking Oil
- 1/2 teaspoons Vanilla Extract
- 1/2 cups Carrots, Peeled And Shredded
- 1/2 cups Walnuts, Chopped
- 1/2 cups Blueberries
- Mix all dry ingredients together in large bowl.
- In a separate bowl, mix together the wet ingredients.
- Combine the ingredients of both bowls and stir until moist.
- Fold in carrots, walnuts and blueberries.
- Grease a 12-cup muffins tin.
- Fill each cup 2/3 full.
- Bake at 400 degrees F for 18-20 minutes.
- This recipe is a slight variation of the recipe on the bag of Bobs Red Mill Hot Oat Bran Cereal.
