Salsa Veggie Scramble
- 2 cups cholesterol-free egg product
- 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 cup chopped green pepper
- 1/2 cup chopped onion
- 1/2 cup KRAFT 2% Milk Shredded Mild Cheddar Cheese
- 1/2 cup TACO BELL Thick & Chunky Salsa
- Beat egg product and cottage cheese in small bowl with wire whisk until well blended.
- Spray medium nonstick skillet with cooking spray.
- Add green pepper and onion; cook on medium-high heat 2 to 4 minutes or until tender, stirring occasionally.
- Add egg product mixture and cheddar cheese.
- Reduce heat to medium.
- Cook 8 to 10 minutes or until set, stirring frequently.
- Serve topped with salsa.
