Carrot And Corn Meal Spice Cake
- 2 Tbsp. Crisco
- 3/4 c. chopped pecans
- 1 1/4 c. brown sugar
- 3/4 c. melted butter
- 4 eggs
- 1 3/4 c. flour
- 3/4 c. corn meal
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. cinnamon
- 2 1/2 c. shredded carrots
- 3/4 c. raisins
- Grease 12-cup Bundt pan.
- Coat pan with nuts.
- In mixing bowl, combine sugar and butter.
- Add eggs, one at a time, beating well after each addition.
- Stir in combined flour, corn meal, baking powder, salt and spices.
- Add carrots and raisins; mix well.
- Pour into pan.
- Bake in 350u0b0 oven for 45 to 50 minutes or until toothpick inserted in center comes out clean.
- Remove from pan immediately.
- Cool 30 minutes.
- Serve warm or cold.
