Spicy Black-Eyed Peas
- 12 oz. pkg. dried black-eyed peas
- 1 1/2 tsp. salt
- 1 1/2 tsp. black pepper
- 4 oz. hot sausage
- 4 large cloves garlic, minced
- 1 small sweet green pepper, seeded and finely chopped
- 1/2 tsp. crushed red pepper
- 1 small onion, chopped
- 3 jalapenos, finely chopped
- 1/2 tsp. ground cumin
- 8 c. water
- 3 slices bacon, cut up in 1/2-inch pieces
- 1 1/4 tsp. chili powder
- 4 tsp. paprika
- 1 small sweet red pepper, seeded and finely chopped
- 1 tsp. Worcestershire sauce
- 1 tsp. Louisiana hot sauce
- 3 c. water
- 1 bay leaf
- Wash
- and sort
- peas.
- Set
- aside.
- Brown
- sausage
- and bacon pieces; drain.
- Add
- 8 cups of water and peas;
- bring to a boil. Skim off
- foam
- from
- top.
- Then add rest of ingredients, except the 3 cups of water.
- Simmer 1 hour, then add the 3 cups of water and simmer another 30 minutes.
- Remove the bay leaf and serve hot over rice or with cornbread.
