Spicy Black-Eyed Peas

  1. Wash
  2. and sort
  3. peas.
  4. Set
  5. aside.
  6. Brown
  7. sausage
  8. and bacon pieces; drain.
  9. Add
  10. 8 cups of water and peas;
  11. bring to a boil. Skim off
  12. foam
  13. from
  14. top.
  15. Then add rest of ingredients, except the 3 cups of water.
  16. Simmer 1 hour, then add the 3 cups of water and simmer another 30 minutes.
  17. Remove the bay leaf and serve hot over rice or with cornbread.
