Red Beans And Rice
- 1 lb dried red beans, rinsed and sorted over
- 3 Tbsp bacon grease
- 1/4 c chopped tasso, or ham
- 1 1/2 c yellow onion, chopped
- 3/4 c celery, chopped
- 3/4 c green bell peppers, chopped
- 1/2 tsp each, salt and pepper
- pinch cayenne
- 3 bay leaves
- 2 Tbsp chopped fresh parsley
- 2 tsp fresh thyme
- 1/2 lb smoked sausage, split in half lengthwise and cut into 1 -inch pieces
- 1 lb smoked ham hocks
- 3 Tbsp chopped garlic
- 10 c chicken stock, or water or (can broth)
- 4 c cooked white rice
- 1/4 c chopped green onions, garnish
- Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
