Cold Noodle Salad with Sesame Shrimp
- 2-1/2 cups Kraft Oriental Sesame Dressing, divided
- 2-1/2 qt. uncooked shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
- 1-1/4 qt. plain dry bread crumbs
- 10 Tbsp. canola oil
- 2-1/4 gal. cooked thin thin rice noodles
- 1 qt. mixed red and yellow peppers, cut into strips
- 1-1/4 qt. carrots, sliced Target 2 lb For $3.00 thru 02/06
- 1-1/4 cups green onions, chopped
- Pour 10 Tbsp.
- (155 mL) dressing (or 2 Tbsp.
- 30 mL dressing for trial recipe) over shrimp in non-reactive pan; toss to coat.
- Refrigerate 30 min.
- to marinate.
- Remove shrimp from marinade; discard marinade.
- Dredge shrimp in bread crumbs.
- Saute in hot oil in large skillet on medium-high heat 4 min.
- on each side or until lightly browned and done.
- Toss noodles with vegetables and remaining dressing.
- For each serving: Plate 1-1/2 cups (375 mL) of the noodle mixture; top with 1/2 cup (125 mL) shrimp.
