Shellfish Cioppino
- 1 large onion, sliced
- 2 large garlic cloves
- 1 bunch scallions
- 1/3 c. parsley, chopped
- 1/3 c. olive or salad oil
- 1 can tomato puree (1 lb. size)
- 1 can tomato sauce (8 oz. size)
- 1 can water (use 1 lb. can)
- 1/2 bay leaf
- 1/4 tsp. pepper
- 1/8 tsp. rosemary
- 1/8 tsp. thyme
- 1 (8 oz.) can sherry
- clams (steam separately)
- scallops
- shrimp
- fish fillets
- Saute onions and garlic in oil for 5 minutes.
- Add parsley, tomato puree, tomato sauce, sherry, spices and water.
- Simmer (covered) for 1 hour.
- Remove garlic.
- Add fish and shellfish. Simmer for 20 to 30 minutes more.
- Top with steamed clams.
- Serve over pasta.
