Pumpkin Fritters

  1. In a large bowl, combine all of the ingredients, except the oil and sugar.
  2. Mix just until blended.
  3. Pour the oil to a depth of 1 inch into a deep, heavy skillet.
  4. Test the oil for hotness by dropping a small bit of batter into it; it should rise pretty quickly.
  5. Drop the batter by teaspoonfuls into the hot oil, being careful not to crowd the skillet.
  6. After the bottoms start to brown, turn the fritters over so they brown evenly.
  7. (They cook very quicklyin 1 to 3 minutes.)
  8. Drain well on paper towels.
  9. Serve immediately (or reheat in a 400F oven for about 10 minutes).
  10. Sprinkle sugar on top just prior to serving.
