New York Cheesecake

  1. Combine all ingredients and work into a smooth paste.
  2. Chill one hour.
  3. Then fit into bottom and sides of a 91/2 springform pan.
  4. Chill while making filling.
  5. Directions:.
  6. Combine cheese and egg yolks.
  7. Beat with electric mixer till perfectly smooth.
  8. Then, add while continuing to beat, 1 C sugar, the flour, sour cream and flavorings.
  9. Beat till light and smooth.
  10. Then whip the egg whites with the remaining 1/3 C sugar till soft peaks form.
  11. Fold whites into cheese mixture and pour into the prepared pan.
  12. Bake at 325 for 70 - 75 minutes.
  13. Turn off heat and let cool in oven with the door ajar.
  14. Note: I have also baked this in a bain marie or water bath but have not noticed much difference.
