Raisin Banana Picnic Cake

  1. Sift together dry ingredients.
  2. Beat in bananas, shortening, milk, peel and vanilla.
  3. Beat 2 minutes, scraping bowl constantly. Add eggs; beat 2 minutes more, scraping bowl.
  4. Stir in raisins and nuts.
  5. Pour into wax lined (or greased and floured) 13 x 9-inch baking pan.
  6. Bake at 350u0b0 for 40 minutes, or until pick comes out clean.
  7. Cool in pan 5 minutes; turn out onto rack to cool.
  8. Frost.
