Raisin Banana Picnic Cake
- 2 c. sifted flour
- 1 1/3 c. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. mashed bananas (about 3 medium)
- 1/2 c. shortening
- 1/4 c. milk
- 1 tsp. grated lemon peel
- 1 tsp. vanilla
- 2 eggs
- 1 c. chopped golden raisins
- 1/2 c. chopped nuts
- Sift together dry ingredients.
- Beat in bananas, shortening, milk, peel and vanilla.
- Beat 2 minutes, scraping bowl constantly. Add eggs; beat 2 minutes more, scraping bowl.
- Stir in raisins and nuts.
- Pour into wax lined (or greased and floured) 13 x 9-inch baking pan.
- Bake at 350u0b0 for 40 minutes, or until pick comes out clean.
- Cool in pan 5 minutes; turn out onto rack to cool.
- Frost.
