Orecchiette with Salmon, Arugula and Artichokes

  1. In a large pot of salted boiling water, cook the pasta until al dente.
  2. Drain, reserving 1/2 cup of the cooking water.
  3. In a large skillet, heat the olive oil.
  4. Add the garlic and cook over high heat until fragrant, about 30 seconds.
  5. Add the pasta and 1/4 cup of the cooking water and cook, stirring, for 2 minutes.
  6. Add the arugula, artichokes, olives, capers and the remaining 1/4 cup of cooking water and simmer, stirring, until the pasta is coated in a creamy sauce, about 1 minute.
  7. Stir in the salmon and cook just until heated through.
  8. Season lightly with salt and serve.
