My Favorite Veggie/Bean Soup
- 1 (28 ounce) can crushed tomatoes (or diced if you like tomatoe pieces)
- 2 (19 ounce) cans beans (I use black and or or red kidney)
- 1 (10 ounce) can green beans
- 2 (10 ounce) cans beef broth (plus the 2 cans of water)
- 1 cup frozen corn (I sometimes use canned)
- 3 -4 carrots
- 3 -4 celery ribs
- 1 small onion
- 2 -3 green onions
- 1 chicken noodle soup mix (I use Lipton)
- 2 -3 bay leaves
- Puy everything in a big pot and boil for 10 minute.
- Simmer till the veggies are tender (20-30 min.)
- The longer you simmer the better it tastes.
- Enjoy!
