Tex Mex Fried Rice

  1. Melt butter and oil in a large pan or wok over medium high heat.
  2. Add onions and peppers and saute until peppers are soft and onions translucent.
  3. Add in corn and garlic and cook for 3 minutes, stirring occasionally.
  4. Add in cooked rice, soy sauce, chili powder, cumin, paprika, oregano, salsa, and lime juice.
  5. Stir well to combine.
  6. Make a well in the center of your pan by pushing all of the rice mixture up onto the sides.
  7. Crack the three eggs into the center, season with salt and pepper, and scramble.
  8. When the eggs are done to your liking, chop them into small pieces with your spatula and fold back into the rice mixture.
  9. Gently fold in black beans, avocado, and cilantro.
  10. Cook until the beans and avocado are just warmed through.
  11. About 3 minutes.
