Quick Cauliflower and Olive Tagine
- 1 tablespoon oil
- 1 onion
- 1 garlic clove
- 2 tablespoons harissa
- 1 cauliflower
- 2 potatoes
- 100 g olives
- 3 tablespoons sultanas
- 1 teaspoon honey
- 1 bunch coriander
- couscous
- Heat the olive oil in a large casserole and fry the onion for five minutes, add the garlic and tagine or harissa paste, and stir.
- Add the cauliflower, potato, olives and raising, and 500ml (17fl oz) of water.
- Bring to the boil and then simmer until the veg is tender.
- Stir in the honey, sprinkle on the coriander, and serve with some couscous.
