Zucchini Couscous
- 1 12 lbs zucchini
- 1 tablespoon olive oil
- 12 teaspoon cumin
- 1 cup water
- 23 cup couscous
- salt and pepper, to taste
- Dice zucchini (pieces should be about 1/4 inch) and cook in oil in a large skillet with cumin, salt and pepper over medium heat, stirring, until the zucchini is tender (about 5 minutes or so).
- Add water and bring to a boil, then add couscous and remove from heat.
- Cover and let stand for about five minutes, then fluff with a fork and serve.
