Almond Butter Chocolate Chip Banana Muffins

  1. Line a 12 pan muffin tin with paper liners.
  2. Preheat the oven to 350F.
  3. In a large bowl or mixer, combine the mashed bananas, eggs, oil, vanilla extract and 1/3 cup almond butter until fully combined.
  4. Add the flour, baking soda, baking powder, and salt to the wet ingredients and mix well.
  5. Fold in the chocolate chunks.
  6. Add 1 teaspoon if batter to the bottom of each pan.
  7. Add a heaping teaspoon if almond butter to the centre of each muffin.
  8. Divide the remaining batter evenly into the muffin cups, about another tablespoon of batter.
  9. Top with more chocolate chunks if desired.
  10. Bake in preheated oven for about 20 minutes.
  11. A toothpick inserted into the center should come out clean.
  12. Remove from oven and allow to cool on wire rack for about 1/2 hour.
  13. Flip out onto a cooling rack to finish cooling.
