Three Layer Raisin Pie
- 1 c. raisins
- 1 c. sour cream
- 1 c. sugar
- 2 eggs, beaten
- 1/2 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. salt
- 1 Tbsp. butter
- 2 Tbsp. lemon juice
- 1 (3 oz.) pkg. cream cheese, softened
- 1/2 c. sifted powdered sugar
- 1 c. whipping cream
- 1 baked pie shell
- Chop raisins; add sour cream, eggs, sugar, spices and salt. Stir well.
- Bring these ingredients to a boil.
- Reduce heat and stir constantly until mixture is thick.
- Remove from heat and add butter and lemon juice.
- Cool completely.
- Blend cream cheese and powdered sugar.
- Whip the cream and fold into cheese mixture. Spread half of cheese mixture into a baked pie shell.
- Add the raisin mixture.
- Top with remaining cheese mixture.
- Chill.
