Mexican Rice and Beef

  1. Heat beef or Morningstar Farms crumbles in large skillet over medium high heat until cooked through.
  2. Add water, rice and chili powder.
  3. Bring to a boil.
  4. Lower heat, cover and simmer for about 10 minutes.
  5. Stir in salsa, black beans and corn.
  6. Cover and simmer for about 8 minutes.
  7. Add cheese, cover and heat through, about 3 more minutes.
