Mexican Rice and Beef
- 12 ounces Morningstar Farms Meal Starters Grillers recipe crumbles or 1 lb ground beef
- 1 cup brown rice
- 2 cups water
- 1 tablespoon chili powder
- 1 (15 ounce) jar medium hot salsa
- 1 (15 ounce) can black beans, drained
- 1 cup frozen corn
- 2 cups 2% cheddar cheese, shredded
- Heat beef or Morningstar Farms crumbles in large skillet over medium high heat until cooked through.
- Add water, rice and chili powder.
- Bring to a boil.
- Lower heat, cover and simmer for about 10 minutes.
- Stir in salsa, black beans and corn.
- Cover and simmer for about 8 minutes.
- Add cheese, cover and heat through, about 3 more minutes.
