Ele's Multi-Color Bread
- 4 oz. fresh spinach leaves
- 2 sm. red onions, finely diced
- 1 tbsp. olive oil
- 1/2 cup warm water
- 1 egg
- 4 cups white flour
- 1-1/2 cup grated blue cheese (loosely packed)
- 1 tsp. salt
- 1 tsp. sugar
- 1-1/2 tsp. rapid rise yeast
- Heat the olive oil in the pan and sautee the onions until lightly golden.
- Add the spinach leaves, stir well, cover tightly and let sit 5 minutes off the heat.
- Remove lid; let cool.
- Put the onion/spinach mixture at the bottom of the bread machine pan.
- Add water and egg.
- Add flour so that it covers the mixture.
- Add cheese.
- Put salt in one corner and sugar in another corner.
- Put yeast in a small well in the center (but make sure it doesn't get wet).
- Use the regular setting on bread machine.
