Skillet Apple And Pork
- 1 Tbsp. olive oil
- 1 can cream of mushroom soup
- 1/2 c. sliced celery
- 1/4 tsp. caraway seed
- 1 apple, cored and sliced
- 1 lb. pork tenderloin
- 3/4 c. apple juice
- 1/4 c. chopped onion
- 1/8 tsp. pepper
- 4 c. hot, cooked noodle style pasta
- In 10-inch skillet over medium-high heat in hot oil, cook pork until brown on all sides.
- Remove, set aside and spoon off all fat.
- In same skillet, combine soup, apple juice, celery, onion, caraway seed, pepper and apple.
- Heat to boiling.
- Return pork to skillet.
- Reduce heat to low.
- Cover and cook 20 minutes or until pork is no longer pink, stirring occasionally.
- Remove pork from skillet and slice.
- Serve with sauce and pasta.
- Garnish with celery leaves and additional apple slices.
