Fried Eggs and Ramps

  1. Heat a cast iron skillet over medium heat and add the olive oil.
  2. When the oil is hot, add the ramps and season with salt and pepper.
  3. Push the ramps to the side and crack the eggs into the skillet.
  4. Season the eggs and cook sunny-side up for about 2 minutes.
  5. (Flip the eggs if you prefer them over easy.)
  6. Sprinkle with a pinch of red pepper flakes, if using, and serve immediately.
