Pork Chops With Ginger Cherry Sauce
- 4 1/4 inch thick center cut pork chops
- 1/4 tsp salt
- 1/4 cup all-purpose flour
- 2 tbsp vegetable oil
- 2 tbsp unsalted butter
- 3 1/4" thick slices of fresh ginger
- 3 scallions cut into thirds
- 3/4 cup frozen black cherries ( thawed )
- 3 tbsp balsalmic vinegar
- 2 tbsp salted butter
- 1/2 cup vegetable broth
- In a large plate mix salt with flour.
- Dredge chops in flour on both sides and set aside.
- Prepare your ginger and scallions.
- In a deep saute pan over medium heat, add butter and oil.
- Let butter melt then add the ginger and scallions.
- Keep them to the sides of the pan.
- Place chops in and cook on one side about three minutes.
- Flip, cook another 2-3 minutes.
- When done, set them aside and cook the other two.
- In the same pan add the balsamic vinegar.
- Cook one minute.
- Add in cherries and half of remaking butter.
- Cook one minute, add in vegetable broth.
- Cook five minutes.
- With the back of a fork, smash down cherries.
- Add last amount of butter.
- Let butter melt and sauce is done.
- Remove ginger and scallions before spooning sauce over pork chops.
