Smothered Spareribs
- 1 slab spareribs
- 1 1/2 c. flour
- 1 tsp. salt
- 1 tsp. garlic powder or 1 tsp. onion powder
- 1 celery stick, chopped
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 1 tsp. Kitchen Bouquet
- black pepper
- dash of red pepper
- oil
- cooked rice
- hot corn bread
- Combine flour, salt, garlic powder, onion powder, pepper and red pepper in a pan.
- Mix well.
- Cut ribs into serving size; wash and pat dry on paper towel.
- Set aside in large skillet.
- Add oil over medium heat.
- Dredge ribs in flour mixture.
- Place ribs in hot oil and brown real well on all sides.
- Remove ribs.
- Pour out most of oil.
- Add onion, celery and bell pepper; fry for about 5 minutes.
- Place ribs in skillet; add water.
- Cover and cook on low heat.
- Add Kitchen Bouquet and more seasonings; cook about 1 1/2 hours.
