In a Hurry Luscious Lemon Bars!
- 1 (16 1/2 ounce) package refrigerated sugar cookie dough
- 34 cup all-purpose flour
- 12 cup powdered sugar
- 14 cup butter, at room temp
- 1 (11 ounce) jar lemon curd
- Heat oven to 350F.
- In bowl combine first 4 ingredients and beat on low with mixer until combined.
- Can also use food processor.
- Pat into bottom and slightly up the sides of a grease 9x13 baking pan.
- bake for 15 minutes or until golden.
- Remove from oven.
- (do not turn off) The dough will be soft and puffy.
- Immediately spoon the Lemon curd over the top and spread out to distribute evenly.
- (An offset spatula/spreader work great).
- Return to oven and bake another 15 minutes.
- Cool completely, then place in refrigerator for 15 minutes.
- Sprinkle with a little extra powdered sugar.
- Cut into 24 bars.
