Delicious and Easy Chocolate Espresso Cookies
- 1 box brownie mix
- Oil, substituted for butter (equal quantity)
- 2 tbsp. espresso, very finely ground
- Make brownie mix according to package directions, substituting equal amount of oil for butter.
- Add espresso; mix well.
- Chill the dough until firm.
- Spoon by rounded tablespoons on cookie sheet.
- Bake at 350F for 10 to 12 minutes.
