Salmon Croquets

  1. Flake salmon using a fork.
  2. Add egg and corn meal mix.
  3. Stir to combine.
  4. Using an ice cream scoop, form the salmon mixture into balls.
  5. Smooth with your hands.
  6. Place on parchment lined tray.
  7. Place tray in freezer for 30 minutes.
  8. Preheat deep fryer to 350.
  9. Fry balls 2-3 minutes or until golden brown and floating to the top of the oil.
  10. Makes 9 croquets.
