Sweet Potato Pound Cake

  1. Heat oven to 350F.
  2. Combine flour, baking powder, baking soda and salt in bowl.
  3. Set aside.
  4. Combine sugar and butter in bowl.
  5. Beat at medium speed, scraping bowl often, until creamy.
  6. Add 1 egg at a time, beating well after each addition.
  7. Add sweet potatoes and orange zest.
  8. Beat at low speed, gradually adding flour mixture alternately with milk, until well mixed.
  9. Spoon batter into 2 greased (9-inch) round cake pans.
  10. Bake 25-35 minutes or until toothpick inserted in center comes out clean.
  11. Cool 10 minutes; remove from pan.
  12. Spread 1/4 cup marmalade over top of each warm cake.
  13. Cut into wedges; dollop with whipped cream, if desired.
