Chicken and Greens in Coconut Milk

  1. Remove the skin from the chicken and lightly brown in the oil with 1 clove of the garlic.
  2. Add 1/2 cup or so of the coconut milk and the remaining garlic.
  3. Simmer for about 10 minutes.
  4. Skin and cut the squash into cubes.
  5. Add to chicken.
  6. Simmer for about 5 more minutes.
  7. Add the greens and remaining coconut milk and let simmer for about 15 more minutes.
  8. Serve over rice.
