Apple Muffins Vegan Style

  1. Preheat the oven to 325F and lightly grease a muffin pan.
  2. In a large bowl, combine the flour, baking powder, cinnamon and stevia.
  3. Add the apple juice, apple and mashed banana and mix well.
  4. Pour the batter into the muffin pan, filling each cup about 2/3 full.
  5. Bake for 35-45 minutes, or until muffins raise and golden brown.
