Feta and Spinach Frittata
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. olive oil
- 1/2 cup chopped seeded plum tomatoes
- 1 pkg. (6 oz.) baby spinach leaves
- 10 eggs, beaten
- 1/4 cup PHILADELPHIA Savory Garlic Cooking Creme
- 1 container (6 oz.) ATHENOS Traditional Crumbled Feta Cheese
- 1/4 tsp. black pepper
- Heat oven to 350F.
- Cook and stir onions in hot oil in large ovenproof skillet on medium heat 3 min.
- or until crisp-tender.
- Add tomatoes; cook 2 min.
- Stir in spinach; cook 6 min.
- or until spinach is wilted.
- Beat eggs and cooking creme until blended.
- Add feta and pepper; pour over vegetable mixture in skillet.
- Bake 35 to 40 min.
- or until frittata is puffed and golden brown.
