Bourbon Cider Mop Sauce

• 6 tablespoons (3/4 stick) salted butter
• 1 1/2 cups apple cider
• 1/3 cup brown sugar
• 1/2 teaspoon freshly ground pepper
• 1/2 cup bourbon

1. Melt the butter in a saucepan.
2. Add the cider, sugar and pepper to bring to a boil.
3. Remove the pan from the heat and stir in the bourbon.
4. Correct the seasoning, adding salt, to taste.
