Grandma Rose's Meatballs Recipe
- 3 lbs. grnd beef or possibly (1 beef, 1 pork, and 1 veal)
- 1 1/2 c. bread crumbs
- 1/2 c. Parmesan cheese, grated
- 6 Large eggs
- 6 cloves, finely minced garlic
- 2 1/2 teaspoon basil leaves
- 3/4 teaspoon finely minced parsley
- 1 1/2 teaspoon salt (to taste)
- 1 teaspoon black pepper
- 1 tbsp. oil to be added last to prevent sticking
- In large bowl, combine grnd meat, bread crumbs, cheese, garlic, salt, pepper, basil, parsley, and Large eggs.
- Mix and blend thoroughly.
- Add in oil and mix again.
- Roll meatballs.
- To keep them from sticking to your hands, keep hands moist with water.
- In frying pan, heat 1/2 c. oil.
- When oil is very warm, brown meatballs quickly.
- Make sure they are brown sufficient, but be careful not to burn them.
- Set them aside till sauce is ready.
