Turkey Scaloppini With Wine Recipe
- 2 pound turkey cutlets
- Flour
- 2 tbsp. extra virgin olive oil
- 2 tbsp. diced salt pork
- 1/2 c. sweet butter
- 1/4 pound onions, peeled and diced
- 2 tbsp. minced parsley
- 1/3 teaspoon salt
- 1/3 teaspoon pepper
- 1/4 c. red wine
- 1/2 pound fresh mushrooms
- 2 med. sized green peppers
- 2 lg. ripe tomatoes, thinly sliced
- 1 good sized garlic clove, mashed
- Sprinkle meat with flour.
- Place oil and butter in skillet and heat.
- Add in pork and onions and saute/fry together.
- Add in meat and brown approximately 5 min per side.
- Add in salt, pepper and wine.
- Cover and simmer for 5 min.
- Slice the mushrooms and green peppers.
- Add in them with the tomatoes to the skillet and cook for an additional 5 min.
- Add in garlic and parsley.
- Cover and cook 10 min.
