Greens and Bulghur Tian
- 12 cup bulgur
- 1 lb fresh kale
- 12 lb fresh spinach
- 12 lb dandelion greens
- 3 tablespoons olive oil
- 6 garlic cloves, minced
- salt
- fresh ground black pepper
- 14 cup parmesan cheese
- 1 cup pre-shredded mozzarella cheese
- 12 cup fresh breadcrumb
- 1 tablespoon olive oil
- Cook bulghur.
- Cook greens.
- Heat olive oil, saute garlic for 2 minutes.
- Stir in greens and bulghur.
- Add salt and pepper.
- Stir in parmesan cheese.
- Remove from heat.
- Put half of greens mixture in 1.5 quart casserole.
- Top with mozzarella cheese.
- Finish with remaining greens.
- Top with bread crumbs.
- Bake at 400F for 30 minutes.
